S. Craig Henry aka “FatCat” was born in Crowley, Louisiana and raised in rural Acadia Parish. He is a 1986 graduate of Midland High School.
Craig & Jamie founded their non-profit foundation Holy Trinity Catering Inc. in 2018.
Craig is married to Jamie Richard of Church Point, LA. The Henry’s have 3 children, Stephen C. Henry II, Madeline Alyse, and Austin Thomas.
The Henry’s reside in Lafayette, LA, and are members of Saint Joseph Catholic Church.
Craig is a Founding Charter Member as well as the Inaugural President of the Lafayette-Acadiana chapter of Legatus from 2013-2015. During that period, Craig was honored to receive the International Legatus Chapter Officer of the Year award. In January of 2019, Craig was elected to the International Board of Governors for Legatus. In January of 2020, Craig was awarded the Legatus Ambassador of the Year for his work with Holy Trinity Catering Inc.
Craig is following in his Father (Rodley Henry) and his Grandmother Viola (Maw Maw Duke) love for cooking traditional cajun meals...
Craig can often be seen cooking several hundred plates of jambalaya in a pot custom made and passed down to him from his father.
